Pink Sauce Cheese Pasta Recipe | qfoodi

Have you always wanted your Italian Pasta to be more Indian ?

What if I tell you that pasta is not actually Italian !!

Everyone knows that pasta is from Italy 🇮🇹. But actually Pasta has reached Italy from the silk road. The Silk Road was a network of trade routes which connected the East and West. Mainly it was used to transfer silk from China to Rome. So along with the silk and other stuff, noodles reached Italy through this silk road and noodles eventually beacame Italian pasta.

Pasta is something that everyone loves to eat. So why not make a perfect pasta at home that too with all the ingredients that are mostly present in all the kitchens.

So, let's dig right into the recipe for the Indian style Pink Sauce Pasta! This recipe is super easy and the pasta tastes so amazing 💯.

Some quick tips for Pink Sauce Pasta

  • Cook the pasta slightly more than Al Dante ( the wheat from which pasta in India is made has less percentage of gluten).

  • I've used penne pasta as more sause goes inside it but you can also use macaroni, spaghetti noodles too

  • Don't blanch the tomatoes or de-seed them while blending them into puree. Put them as whole in a mixer grinder.

  • I've just used onions and green bell peppers in   my veggies but you can add any veggies that you like,  for example -sweet corn, broccoli, jalapeno, black olives, etc.

  • Do not add veggies before the pasta as the crunch of veggies adds to the flavor while they are slightly raw.

Ingredients -

For boiling Pasta-

  • 2 cups Penne Pasta (Macaroni/Spaghetti)
  • 2tsp Salt
  • 2tsp Oil

For Pink Sauce

  • 2tsp Oil
  • 2-3 Garlic Cloves (finely chopped)
  • 2 Large Onions (finely chopped)
  • 1tsp Red Chilli Powder
  • 5-6 Large Tomatoes (pureed)
  • Salt to taste
  • 2-3 tsp Tomato Ketchup
  • ½ cup sweet corn (boiled)
  • 1 Large Green Bell Pepper (capsicum, roughly chopped)

Directions to Follow

For boiling Pasta

  • Add 3-4 cups of water in a pan and keep it on high flame.
  • Then add the pasta (macaroni/spaghetti).
  • Add 2tsp salt and 2tsp oil.
  • Cook the Pasta till it's 90% done. The rest 10% will be cooked in the Sauce.
  • When you'll cut the pasta from the middle then you'll notice a white line in the pasta and that's the time when it is 80-90% done.
  • Keep in mind Don't Overcook The Pasta

  • Don't put your cooked pasta under the cold water to make it cold as all the starch will start flowing out from pasta and that won't taste good.

For Pink Sauce

  • Heat 2 tsp Oil in a pan.
  • Add finely chopped Garlic in the oil and saute it and cook till fragrant.
  • Add the chopped onions and cook till translucent.
  • Add red Chilli Powder and mix well.
  • Now add tomato puree and salt to taste and cook for 5-8 minutes on medium flame

  • Now add the pasta in the Pink Sauce and mix well.
  • Add 2 tsp Tomato Ketchup.
  • Add ½ cup boiled sweet corn.
  • Add chopped Bell Peppers
  • Mix the pasta well and add dried oregano, chilli flakes and butter and mix them well.
  • Add ¼ cup of Fresh Cream and mix.
  • Cook for couple of minutes, let the pink sauce flow inside the pasta so that it gives juicy taste and trust me pasta filled with the sauce tastes super amazing 🤤😍
  • Transfer the Pasta from the pan in your plate and grate some cheese over the pasta
